Spanish Tomato Salsa Dip – An Easy Versatile Recipe

This Spanish Tomato Salsa Dip recipe can be used as an alternative to Fresh Tomatoes for Aioli Appetizer, but it has other uses as well.

One very hot day, when we were working in Santa Ponsa, a resort in the south of Majorca, Colin and I became very dehydrated and decided to stop in at one of the Spanish bars for liquid refreshment and a small snack. We ordered a soft drink and the bar man served us some Nacho Chips …

… with a small bowl of fresh Spanish Tomato Salsa Dip.

We both really enjoyed the dip. It tasted so fresh as compared to jarred Salsa Dips we had bought in the past. I asked the gentleman who served us how to make this dip. He was kind enough to give me the recipe and now we always make our own at home.

The following recipe is fast and simple, but well worth making and …

… will keep up to 3 days in the refrigerator.

RECIPE

Ingredients:

3 to 4 large tomatoes (blanched and then chopped into small pieces

1 Large Onion (finely chopped)

3-4 garlic cloves (crushed or finely chopped)

½ Green Pepper (finely chopped)

Ό teaspoon of Sugar (to reduce acidity of tomatoes)

Fresh Parsley

Salt and Pepper to your taste

Method:

Place a small amount of olive oil in a sauce pan.

Heat over low heat, then add onion, garlic and green pepper and cook until the onion is clear and the peppers are slightly softened.

Add tomatoes as well as the juice of these tomatoes.

Cook over low heat slowly until the tomatoes and other ingredients form a thickened sauce.

Add the fresh parsley and simmer for 10 minutes over low heat. Add salt and pepper to your liking.

Cooking Tip:

It is very important to cook this Spanish Tomato Salsa dip over a low heat (simmer) so that all of the ingredients cook slowly and blend naturally together for the best flavour.

Serving Tips:

This Salsa is very appetizing and quite versatile. Some great uses for this dip include:

- Place Nachos in a baking dish, and top them with your fresh homemade Spanish Tomato Salsa Dip and Mozzarella or Cheddar Cheese. Warm this dish in your oven until the cheese melts and becomes slightly crispy. Mmmmm.

- Serve this Salsa with Guacamole and Sour Cream as fillers for Chicken Fajitas or Tacos.

- Serve as a dipping sauce for Crisps at your next party.

- Spoon over Meat, Poultry or Fish to give them a Spanish flavour.

No doubt you will find your own uses for this recipe.

You can save money by making your own Spanish Tomato Salsa Dip rather than buying the jarred Tomato Salsas and, as it is freshly made, you won’t be consuming preservatives found in the store bought salsas.
