A MALLORCAN “COMFORT FOOD” CLASSIC MADE WITH AUBERGINES
Tumbet Spanish recipe is a meal to temp your taste buds. Tumbet is one of the most popular dishes of Mallorca that is simple to make and, the ingredients are easy to find.
If you ever feel the need for some delicious comfort food, this warming, Tumbet Casserole will do the trick.
8 to 10 pieces of thinly sliced Pork Loin
About 5 large Tomatoes, peeled and sliced thinly, or see Hints below for alternative
2 Aubergines, sliced thinly
3 Potatoes, skinned and sliced thinly
1 Red Chilli Pepper, finely chopped
2 Garlic Cloves, crushed
1 small Onion, finely chopped
2 tablespoons Olive Oil
1 Bay Leaf
A sprinkle of Oregano
A sprinkle of Basil
A sprinkle of Parsley
Salt and Pepper, to your taste
If you are short on time, you can make this dish quicker by replacing the fresh sliced tomatoes with a large can of tomatoes.
If you cannot find fresh Chili Peppers in your supermarket, you can add chilli powder or tabasco sauce to the oil as a replacement.
METHOD for preparing Tumbet Spanish recipe
In a large frying pan, lightly sauté the garlic, onion, and chilli pepper in olive oil. If you are not using a fresh chilli pepper, add your chilli powder or tabasco sauce to the oil. DO NOT USE VIRGIN OLIVE OIL.
Add the thinly sliced pork loin slices and fry the meat on both sides. When cooked, line the bottom of your casserole dish with the meat and put a cover over the top or cover it with aluminium foil while preparing the remaining ingredients.
If necessary, add more olive oil to the frying pan and fry the sliced potatoes until almost cooked. Remove the potato slices and place them on top of the pork slices.
If you need to add more oil to the frying pan do so now, and fry the Aubergine slices on medium heat. Fry the slices of vegetables on both sides until tender. When cooked, place them over the potatoes in the casserole dish.
Add the tomatoes and a small amount of water to the frying pan and cook until softened or, if you prefer, you can use canned tomatoes. Sprinkle some oregano, basil and parsley over the top of the tomatoes and cook for one minute longer. If you are using salt and pepper, you can add them to the tomatoes now.
Cover the casserole dish with the tomatoes, ensuring the juices reach the bottom of the casserole dish.
Place the Bay Leaf in the centre of the Tumbet and Bake the casserole for about 30 to 45 minutes at 180ᶹ C.
VARIATIONS for Tumbet Spanish recipe.
For those who prefer to make the Tumbet Spanish recipe Casserole without pork, you can replace the layer of pork with a layer of cooked white fish (cod, haddock, hake, etc). Just add some lemon juice to the fish when you cook it to add even more flavour to this fantastic dish.
For a flavoursome Vegetarian Dish, this Tumbet casserole can be made without fish or meat.
